About Us

The Mughal Empire's culinary legacy is evident in many of the world's most beloved Indian dishes.

This cuisine developed from the 16th century onwards, when the Mughals, a Turkic dynasty from Central Asia who admired Persian culture, ruled the country. Monumental structures like the Taj Mahal and the world-famous Mughal miniatures, depicting life at the Indian imperial court, remind us of their time.

They settled mainly in the north of the country, where they established their capital in Delhi, and introduced new dishes, spices, and cooking methods – such as cooking with the tandoor, a clay-built charcoal oven – which they had brought from their own culture but had largely adopted from the Persians.

Over time, local herbs and spices also found their way into their cuisine, which was increasingly changed and eventually became Mughal cuisine (muglai) – the national cuisine of northern India.

Mughal cuisine is famous for its delicious meat dishes and rice pilafs. Yogurt, cream, fruits, and nut butter are often added to make the sauces mild and creamy. Another secret of Indian cooking lies in the combination of spices: the curry powder known in Europe is not used in Indian cuisine.
